Pumpkin Spice Syrup Recipe | Lauren Jolly Photography

I’m not ashamed to admit it – I love pumpkin spice flavored coffee. For most of the year, I’m in denial about my love for pumpkin everything. But, as soon as that first leaf changes color or I feel that first fall breeze, my heart yearns for pumpkin. Right now, we’re smack in the middle of fall here in North Carolina, so naturally I found myself looking up recipes for pumpkin syrup, pumpkin cookies, and pumpkin carving patterns the other night. I came across a delicious pumpkin spice syrup recipe and couldn’t help myself – at 10 o’clock at night, I made it and it’s been in every cup of coffee since then. I changed it up a bit, but THIS is the recipe that it was adapted from.

This recipe is easy-peesy, only has four ingredients, and is crazy delicious. I’ve never posted a recipe on my blog, but I felt it wasn’t fair to keep this one to myself. Let me know if you try it and what you think!

Ingredients:

Container to store syrup (I used a mason jar)

Water – 1 cup

Brown Sugar – 3/4 cup

Pumpkin Puree – 3 tbsp

*Ginger – 2 “shakes”

*Nutmeg – 2 “shakes”

*Allspice – 2 “shakes”

*Cinnamon – 2 “shakes”

*The recipe called for “1/2 tsp of pumpkin pie spice” but instead I just used the spices that make up pumpkin pie spice. Feel free to do it either way!

Directions:

1. Combine water and brown sugar in a microwave safe bowl. Heat in microwave for 4-5 minutes. This can also be done on the stove if you prefer.

2. Stir sugar until completely dissolved.

3. Whisk in pumpkin puree. Don’t skimp here. The less you whisk, the less pumpkin flavor there will be.

4. Drain into your container through a sieve or cheesecloth. You may lose some pumpkin puree here, but don’t worry – the flavor will still be there.

5. Store in an airtight container in the refrigerator. I used a mason jar – it works well for storage but is a little difficult to pour into my coffee.

And once you’ve caffeinated with a delicious cup of pumpkin coffee, you can enjoy the glorious leaves outside! I must say autumn in NC is my absolute favorite. The air just smells different. And spending it with Finn has been wonderful, so far!
